Resumo
In this study, polyphenolic compounds present in residual raw materials such as grape and apple pomace, from wine and cider processing, respectively, were extracted using different solvents (water, methanol, and ethanol). Based on a factorial design, a series of conditions were selected to optimize the results. Total extractable polyphenols were quantified, and the antioxidant activity of the extracts was evaluated. As expected, the alcoholic extracts of grape and apple pomace exhibited good antioxidant activity; even at low doses, their effect was sometimes comparable to that of common synthetic antioxidants used in food and cosmetics.
